Blended Ground Beef Taco Filling (Low Calorie)

This is a lower calorie variation on the Classic Ground Beef Taco Meat Recipe but just because it’s lower in calories doesn’t mean its short on taste. Some folks around our office even like this version better than the classic.
To lower the calorie content, the ground beef is supplemented with chopped mushrooms at a ratio of two parts beef, one part mushrooms. This does two things. First, it lowers the calories just due to the fact that you’re eating less beef and more mushrooms, which are extremely low in calories. Second, the flavor, texture and moisture content of the mushrooms allows you to use a leaner beef without sacrificing taste. A 3oz serving of the low calorie recipe made with 93/7 ground beef comes in under 100 calories compared to over 220 calories for taco beef made with 80/20 beef.

Ingredients:

1LB 90/10 or 93/7 Ground Beef
8oz Mushrooms
4 TB Chile Revival’s Hatch Chile Blend
Diced Onions (optional)
1/3 cup warm water

1/2 TB cooking oil

Instructions:

Coarsely chop the mushrooms to about the same size texture as the ground beef. You can pulse in a food processor or just use a knife.
Add the chopped mushrooms to the ground beef and mix thoroughly.
Heat a skillet over medium-high heat
When your skillet is hot, add your oil.
If you are using diced onions, add them and cook for a few minutes until they start to soften.
Add the ground beef/mushroom mixture and brown.
Add the Hatch Chile Blend and the warm water, stir well
Reduce the heat to low and simmer for 5 minutes, stirring occasionally.
Eat Tacos…guilt free.
